  Uses of Ammonium Acetate

  • Ammonium acetate is commonly used as a food acidifying agent. It changes or controls the alkalinity or acidity of the food. It is commonly employed in the Knoevenagel condensation technique as a catalyst. During biosynthesis, the Borch reaction uses the molecule as one of the sources of ammonia.
  • A protein-precipitation reagent is prepared by combining ammonium acetate with fully distilled water.
  • The substance can also be used as a mobile phase in ESI (electrospray ionization) mass spectrometry of molecules and proteins, as well as in HPLC (high-performance liquid chromatography).
  • Ammonium acetate is more effective as a diuretic. Because ammonium acetate is unstable at low pressure, it is used to replace cell buffers with a variety of non-explosive salts in the processing of mass spectrometry samples.
